Instructions
  1. Kvass is infused for 3 days. For kvass, cut the crust from half a loaf of black bread. Slice them and put them on a baking sheet. Put it in the oven.
  2. Put millet, sugar, raisins, yeast in a jar of 2 liters. Pour in some warm water and mix. Lay out the browned cakes and fill the jar with water. Transfer the jar to a bowl, cover with gauze and leave to ripen for three days.
  3. Kvass is ready.
  4. Strain the kvass through a sieve or cheesecloth, leaving 0.5 liters of sourdough. Fill with fresh water, put 3 tablespoons of sugar and 15 raisins, mix and put again for 3 days. And so on until you get bored. To add color, you want to add a black crust to the black bread. If you just drink kvass, you can sweeten it. For mayonnaise, you need to mix all the products in a blender.
  5. For okroshka, I always take a large clay pot. Finely chop the onion and dill. We send it to the pot, sprinkle with salt and cool it. Chop the onion with dill malkai until it releases the juice. I have a wooden pusher for this purpose. I always cut the vegetables into very small cubes, chop the parsley finely and put it in a saucepan.
  6. Open canned anchovies in tomato sauce, put half in a bowl and mash with a smaller fork. If you don’t like anchovy in tomato sauce, you can take other dishes. It’s not up for discussion. Everyone has their own taste.
  7. Put the mashed anchovies and mayonnaise in a saucepan.
  8. Mix it thoroughly.
  9. Pour kvass. Add sea salt and sugar.
  10. Peel the potatoes, dry them and cut them into small cubes.
  11. Pour oil into the pan. Heat the sunflower oil in a frying pan and put the potatoes. Fry it until tender and beautifully colored.
  12. We send it to the pot. Pepper if desired. Cover with a lid and put in the refrigerator to brew.
