  1. In a deep bowl, mix 3 tablespoons of sifted flour, yeast, sugar and 200 ml of warm water. Cover the bowl with a towel and leave for 15 minutes for the yeast to take effect. This will be our leaven.
  2. Add sunflower oil and salt to the sourdough. Pour in the remaining water. Mix it.
  3. Last of all, add the sifted flour. Knead the dough, cover with a towel and put it away for an hour in a warm place.
  4. During this time, prepare the filling. Pour sunflower oil into a preheated frying pan. Add the minced meat and mix well. Fry for 2-3 minutes.
  5. Cut the onion and garlic into small cubes and send them to the minced meat. Fry for 2 minutes.
  6. Grate the pumpkin on a coarse grater and add it to the pan. Mix it.
  7. Add salt and pepper to taste. Add paprika. Mix well.
  8. Finely chop the greens, send them to the minced meat. Fry for 2 minutes and leave to cool.
  9. After an hour, press the dough well. Form a circle.
  10. Divide into 4 parts.
  11. Roll out each piece into an oval tortilla. In the middle we spread the cooled filling.
  12. Pinch to the middle of the edge.
  13. Turn the seam down. Form a roll.
  14. Cover the baking tray with parchment. Place the rolls close to each other.
  15. Brush with egg yolk and sprinkle with sesame seeds.
  16. We send it to a preheated 180 ° oven for 35 minutes until golden brown. Focus on your oven.
