Pita Pie with Cheese Crust Recipe
A very delicious pie that will saturate and cheer up in the coolest autumn weather. The recipe has been made with minor changes: I have chicken and turkey meat, and the author’s recipe contains chicken and duck meat.

  1. Chicken fillet, turkey breast fillet and turkey thigh fillet cut into cubes. Put the meat in a bowl. Add salt and white pepper to taste. Mix it.
  2. Preheat the frying pan. Fry the poultry meat in a dry frying pan until golden brown ~ 5 minutes.
  3. The fried meat is transferred to a bowl.
  4. Now prepare the cheese filling. Grate suluguni cheese on a coarse grater. Set aside a small portion of the cheese (it will be needed for sprinkling the cake). Put the rest of the cheese in a bowl.
  5. Whisk 4 eggs into the grated cheese.
  6. Chop the green onion and dill.
  7. Add the greens to the cheese. Stir until smooth.
  8. Prepare the filling.
  9. Now take a thin “Armenian pita bread”, cut 4 circles the size of a baking dish.
  10. Heat two frying pans and add the butter. Turn down the heat. Moisten the pita bread slices in cold water. Put in a mold on a sheet of pita bread. Fry the pita bread on one side until golden brown, and then spread the cheese filling in the middle of the pita leaf. Spread over the surface, leaving free edges.
  11. Put a layer of meat on top.
  12. Then lay out the cheese filling again. Cover the top with moist pita bread.
  13. When the lower part of the lavash is browned, turn it over. Repeat the same with the pita bread in another pan.
  14. Prepare the sauce “a la bechamel”. Heat a frying pan, add three types of oil: olive, sunflower and butter.
  15. Add a tablespoon of flour.
  16. Fry the flour, stirring all the time with a whisk.
  17. Pour in 10% cream. Evaporate until thickened. Add salt and white pepper to taste. Mix it.
  18. Pour in the dry white wine and add a pinch of sugar. Evaporate until thickened.
  19. Cover the baking sheet with parchment and brush with sunflower oil. Put one layer of pita bread with filling on parchment.
  20. We grease the pita bread with the prepared sauce on top.
  21. Cover the second pita bread with the filling and smear the sauce again. Sprinkle with the postponed suluguni cheese. Put in the oven for 8 minutes at a temperature of 200 degrees.
  22. We put the finished pie on a plate.
  23. Garnish with lemon, tomatoes, cherry tomato halves, basil, dill and green onions.
