  1. Cooking minced meat. Twist the pork and beef through a meat grinder.
  2. Rinse the rice with water, fill it with hot water and salt. Put on fire, bring to a boil. Cook for 5 minutes.
  3. Half-cooked rice is thrown into a colander, washed with cold water to stop the cooking process.
  4. Peel 6 cloves of garlic and remove the middle from each (young garlic can not be removed). Two cloves of garlic are cut into plates. They will go as a side dish to a vegetable pillow.
  5. Season the minced meat with salt and pepper, add two garlic cloves passed through the press. Knead well.
  6. Add the rice to the minced meat and knead again.
  7. Start cooking the vegetable pillow. Peel and dice the onion.
  8. Carrots are also peeled and three on a coarse grater.
  9. Finely chop the cabbage.
  10. I use hot pepper, which grows on my windowsill. I do not know what this thing is, but it is very small (1.5-2) cm, but insanely sharp. One in sharpness imperceptibly replaces the standard chili pepper.
  11. I don’t peel seeds because I like spicy. You do it to your liking. Finely chop the pepper.
  12. Pour vegetable oil on a hot frying pan. Put the garlic and chili plates in the heated oil.
  13. After 1-2 minutes, add the onion. We add a little salt to it so that it does not burn.
  14. Fry the onion until transparent and add the carrots. Fry together for about 5-7 minutes.
  15. Put the vegetables in the form in which we will bake the meatballs. At the same time, we try to squeeze the oil into the pan.
  16. Fry the cabbage in this oil. Roasting will give the cabbage a brighter taste.
  17. Add the cabbage to the rest of the vegetables and mix.
  18. Form balls. From such a quantity of minced meat, 12 standard meatballs are obtained. So that there are 2 of them per serving. But since I have a square shape, I formed 16 smaller meatballs, 3 per serving.
  19. To keep the meatballs in shape better and at the same time soaked in sauce, they need to be boiled a little. Roasting will give a crust that will not soak the sauce, and brewing is what you need. We send each meatball to boiling water for 30 seconds. After that, we spread it on a vegetable pillow.
  20. Proceed to the preparation of the sauce. Dissolve the tomato paste in 250 ml of water or take 250 ml of tomato juice. Add salt to taste, add sugar and freshly ground black pepper.
  21. Add 2 cloves of garlic, passed through a garlic press, and sour cream. Stir until smooth.
  22. Pour the sauce over the meatballs. We send it to a preheated 180 degree oven. First for 20 minutes.
  23. Meanwhile, cut the mozzarella into plates according to the number of meatballs. You can take hard cheese, but it will taste better with mozzarella, because it stretches better.
  24. When 20 minutes have passed, spread a piece of cheese on each meatball. Bake for another 20 minutes.
  25. Sprinkle with chopped herbs before serving. I took cilantro.
  26. Set the table.
  27. We put them on plates. Put the vegetables as a side dish down, and put the meatballs on top. Piquant!
