Meat Pudding with Eggplant Sauté Recipe
Meat pudding will be a great dish for lunch, dinner or even for a festive table. It can be served as an independent dish or with a side dish. Instead of a side dish, I have “eggplant saute in Hungarian”. Instead of pork, you can use other meat, such as beef or chicken.

  1. Cut the meat into pieces and put it in a bowl.
  2. Chop the peeled onion and garlic. Heat a frying pan with vegetable oil (or butter puree) and fry the vegetables until golden brown.
  3. Add vegetables to the meat. Preheat the oven to 180 °C.
  4. Divide the eggs into whites and yolks. Add the yolks, herbs, salt and pepper to the bowl and mix.
  5. Put the meat mixture into the bowl of a blender and grind until smooth. Or we pass it through a meat grinder.
  6. Whisk the whites with a pinch of salt until soft peaks.
  7. Add 1 tablespoon of whipped protein to the minced meat and mix gently.
  8. Grease the baking dish with vegetable oil (or butter) and sprinkle with breadcrumbs.
  9. Put the minced meat into the mold.
  10. Spread the eggplant combs evenly on top. Draw 3 deep stripes with the back of a large spoon. The vegetable juice from the saute will penetrate into the meat pudding and soak it. Sprinkle with breadcrumbs (1-2 tablespoons).
  11. Cover the pudding with foil (not tightly) and put the mold in the oven for 40 minutes. Then remove the foil, sprinkle with grated cheese, garnish with cherry tomatoes and place in the oven for 1-2 minutes until the cheese melts.
  12. Cut the slightly cooled pudding into pieces, sprinkle with herbs and serve. Enjoy your meal!t
