Instructions
  1. Let’s start cooking our healthy burgers! Let’s start with the bun. Grate three potatoes on a fine grater. A little salt. So that it does not darken, you can sprinkle with lemon juice. Leave the grated potatoes for 15 minutes to let the juice flow. This excess juice is drained.
  2. Finely chop the mushrooms.
  3. Mix the ingredients: potatoes, raw mushrooms, egg, a little flour. Add seasonings and spices to taste.
  4. To make our “bun” juicier, add a small piece of softened butter and carefully stir the so-called “dough” with a spoon.
  5. Now let’s do the cutlets. As I already wrote in the ingredients section, I have minced veal and chicken. My favorite mix. We twist the meat in a meat grinder together with onions. In my opinion, the cutlets are tastier if you use a meat grinder, not a blender. Another consistency of meat is obtained! Add egg, favorite spices (including garlic), salt to the minced meat. And cottage cheese. It is cottage cheese that is the key to our future juiciness in cutlets! Cottage cheese should not be whipped with a blender. Let it be even a little grainy, when baking in the oven it will only play into our hands.
  6. Also add chopped greens to the minced meat.
  7. That’s it, now proceed to the “modeling” of loaves and meatballs. Take a little potato mixture, roll in flour, then in egg and breadcrumbs. Yes, the mass will not be too convenient for work, because we did not add a lot of flour to the “dough” (why do we need a rubber taste?).
  8. Having rolled the potato mass in batter and breadcrumbs, it will be quite easy to give it the desired shape. On a baking sheet covered with baking paper, lay out the potato mass, giving it a shape. This is what the bottom of the burger bread will look like: flat.
  9. And the upper part is a little “convex”, which can be sprinkled with sesame seeds for beauty.
  10. We do the same with cutlets: flour-egg-breadcrumbs. Shape the cutlets into the size of potato bread. Place the rolls and cutlets in a preheated oven for 25-30 minutes (180 degrees). It is baked at the same time.

  12. Start assembling the burger. The bottom layer of potatoes is barbecue sauce + mayonnaise (homemade!) – pickled onion (I pickled as follows: 1 tbsp soy sauce, 1 tbsp olive oil, lemon juice, half a spoonful of sugar)
  13. Then the cutlet – a little more mayonnaise – thinly sliced slices of tomato and pickled cucumber-cabbage-cheese – the top layer of potatoes (greased with sauce). I had the usual grated Dutch cheese, but a cheese plate would definitely be better. Tip: to give the burger a special juiciness, do not spare the sauce! If you are watching your weight, high-calorie mayonnaise can always be replaced with a self-made sauce of unsweetened yogurt (or sour cream). Instead of barbecue, you can take homemade cheese sauce or cook in tomato sauce. Before serving, you can hold the burger in the oven for a couple of minutes or reheat it in the microwave so that the cheese melts a little. Enjoy your meal!
