Salad is a Side Dish of Pearl Barley Recipe
This dish can be served cold as a salad, or warm as a side dish. Pearl barley, beans and corn are perfectly combined with each other and together with a light dressing based on olive oil and lemon juice turn into an original salad, which can also be served as a side dish to meat, fish and egg dishes!

Ingredients
- 150 gram Pearl barley (boiled)
- 100 gram Corn (canned)
- 100 gram Beans
- Allspice (to taste)
- 2 tablespoons Olive oil
- 1/2 tablespoons Lemon juice
- 1/4 bunch Parsley
Instructions
- To prepare a salad, grits must be boiled. I always cook pearl barley for no more than 40 minutes so that it remains whole and elastic and does not boil.
- For dressing, mix olive oil, salt, black pepper and lemon juice.
- Put the pearl barley, corn and beans in a cup.
- Add finely chopped parsley.
- Add the salad dressing and stir.
