Eggplant on Sardinian Recipe
Recipe from the series "Delicious, fast, simple". Not even that - mega tasty, mega simple and mega fast. I was bored with a couple of eggplants and then I caught the eye of this recipe-a great snack turned out almost instantly, but just as instantly disappeared)! So Italy! Trying it?

Ingredients
- 450 gram Eggplant
- 5 pieces Cherry tomatoes
- Parmesan or replace with any salty cheese,I have 4 tbsp grated Parmesan, to taste
- Vegetable oil to taste
- Salt to taste
Instructions
- Cut the eggplant lengthwise into slices.
- Pour half a finger thick oil into a preheated frying pan and fry the eggplants in portions over high heat on all sides. Put on a napkin.
- Spread the eggplant on the dish in layers, sprinkling each layer with salt and grated cheese. If you use feta, be careful with salt! Spread the cherry cut into halves.
- And serve!
