Eggplant with Beans Recipe

This vegetable dish can be used as a separate dish and as a side dish. Very satisfying, delicious and flavorful. Perfect for fasting and vegetarian food.

  1. Cut the eggplant, sprinkle with salt and leave for 15-20 minutes to leave the bitterness. Then we wash them and dry them.
  2. Cut the onion half-rings, carrots cut into strips. Fry them in oil for 7-10 minutes. Then add the eggplant and fry for another 5-7 minutes.
  3. Then put the tomato paste, soy sauce, pour 1/2 Cup of water. Bring to a boil, reduce the heat to medium and simmer for 15 minutes.
  4. At the end, add the beans, salt, pepper, and garlic. Keep on fire for a couple of minutes and remove.
  5. Sprinkle with herbs before serving. Bon Appetit!
