Extremely fragrant, delicious and natural marmalade. The addition of red Rowan gives it a beautiful color. It's so nice to eat it on the eve of your favorite holiday. And the marmalade will be a great choice for a gift.
I picked up these apples in September, in a clean place
near an abandoned house while walking with the dogs.
Bright, red and smooth. They lay
in the kitchen until December and were well preserved. I washed the apples
and cut them into four pieces. I didn't remove the core.
I poured water and boiled the apples to a boil. Added
rowan.
Cook for another 10 minutes.
Crushed apples with rowan with an immersion blender
and rubbed through a sieve. (This process is not fast
and you need to wipe it hot. Cold mass
is harder to wipe.) I poured sugar and,
stirring constantly, cooked for another 10 minutes from the time
of boiling.
The baking sheet was covered with parchment paper
and poured apple-rowan puree. When the mass
thickened and turned into marmalade, cut
it into cubes. The whole mass didn't fit on the baking
sheet and I put it in two 750 gram jars.
To serve on the table, the cubes were rolled in granulated
sugar.
I made more marmalade with sugar so that
treat a neighbor. Sugar-free marmalade left
on a tray to dry.
It is not stored in sugar for a long time, it melts. Marmalade is transparent and beautiful
in color.
