Envelopes from Pita Bread with Potatoes and Mushrooms Recipe
Very often I prepare such envelopes. Their filling can be very different: from mashed potatoes with herbs to sweet fruit and berry jam. Today I decided to add fried mushrooms and onions to the mashed potatoes. Lavash, as always, turns out thin and crispy, and the filling is very tender!

- Vegetable oil
Instructions
- Boil the potatoes in salted water with the addition of allspice until tender, then discard the pepper, drain the water, leaving a little for cooking mashed potatoes. Add finely chopped dill.
- Cut the mushrooms into cubes, pour water, bring to a boil, add salt and cook for 10 minutes, then put them in a colander.
- Cut the onion into half rings, fry with the addition of vegetable oil until golden brown, then add mushrooms, soy sauce and nutmeg to the onion, simmer for 10-15 minutes.
- Cut the pita bread with scissors into squares with a side of about 12 cm . From a large sheet of lavash, I got 8 such blanks of approximately square shape.
- For each square, we spread a tablespoon of mashed potatoes with herbs and mushrooms with onions, flatten a little, pressing, and then fold into an envelope.
- Fry each envelope on both sides, adding vegetable oil.
- Serve preferably hot.
