Marshmallow with Blueberries and Chocolate Mousse Recipe
I came up with the idea to make marshmallows, but not the usual shape, but a little flattened, and even added blueberries! But it wasn't enough... And I made a chocolate mousse, which I spread on marshmallows! Then my experiment reached the final mark.

Ingredients
Marshmallow:
- 2 pieces Egg white
- 320 gram Blueberries
- 14 gram Gelatin
- 400 gram Sugar
- 1 teaspoon Lemon acid
Mousse:
- 200 gram Dark chocolate
- 180 ml Water
- 3 tablespoons Sugar
Instructions
- Defrost the blueberries (if frozen) and mash them into a puree with a blender| fork. Strain the skin through a towel. Measure 280 ml.
- Mix sugar with berry juice, put the syrup on the fire. Check the readiness with the help of "experience": 1. Drop a drop of syrup into a plate with cold water, it should gather into a ball and become soft. Properly prepare the syrup is half the battle!
- In parallel, whisk the cooled proteins to peaks, and then pour in the lemon juice, and then the syrup.
- Add the gelatin previously soaked and dissolved in a water bath.
- Next, beat the mass with a mixer (if you are afraid that it will burn, put the nozzle on the drill, not on the screwdriver, but on the drill-screwdriver. Nothing is burning. Checked!) before putting the mass on the corollas.
- Well, now you can give free rein to your imagination. Portions of mousse for the whole marshmallow is not enough, so I made a regular marshmallow. Nozzle: French tube. Leave to dry for 30-40 minutes.
- While the marshmallows are drying out, we will prepare a mousse.: Break the chocolate into pieces and add water, put on medium heat (about 3) and cook the mixture until the chocolate dissolves, do not heat too much! Pre-prepare a deep bowl with ice water and ice cubes, put it back in the mold and beat with a mixer. (I decided to add a mousse recipe with great photos) The first stage: nothing happens, just foam.
- The second stage: the stains from the mixer begin to appear. The third stage: there should be clearly visible spots, but the mousse is not thick.
- Stage Four: here it is! Delicate as a cloud, delicious and super chocolate mousse!
- Now spread the mousse on the base.
