The Marmalade-Walnut Roll from Black Currant Recipe
Today I offer a very tasty and healthy treat made from black currant berries and nuts. Namely, a marmalade roll, which turns out to be moderately sweet, with a pleasant sourness and a wonderful nutty aftertaste.
Put the black currant in a saucepan, pour in water and pour out the sugar. Bring to a boil and cook for 5 minutes.
Then puree with an immersion blender and RUB the resulting mass through a sieve to get rid of the skin and seeds.
Pour gelatin into the resulting currant puree, heat to a maximum of 60 degrees (do not boil!), stirring continuously until completely dissolved.
Cover a wide container with food wrap and pour the currant mass on it, about 6-7 mm thick.
Chop the nuts with a knife.
Sprinkle with nuts currant mass. Remove to a cool place.
Then you need to periodically check the mass and catch the moment when it grabs, but it is not completely frozen yet and carefully roll it into a roll. Wrap it in plastic wrap and put it in the refrigerator for at least 4 hours, preferably overnight.
Ready-made marmalade-nut roll is served to the table.
