Tortilla of Zucchini Recipe
The zucchini season is in full swing. I offer you a very light and delicious dish - a zucchini tortilla (I eat it for breakfast, lunch and dinner). In most Spanish-speaking countries, a tortilla is any omelet with vegetables, served hot or cold, sometimes as a snack.

Ingredients
- 400 gram Zucchini
- 4 pieces Chicken eggs
- 1 piece Onion
- Salt, black pepper
- Vegetable oil
Instructions
- These are the vegetables we need.
- Finely chop the onion and fry in oil until golden brown.
- GRATE the zucchini on a coarse grater.
- Add half of the grated zucchini (squeeze the juice) to the onion and fry on fire for 2-3 minutes.
- Beat the eggs with half of the (raw) grated zucchini.
- Add the fried mixture of zucchini and onion, season with salt and pepper, mix thoroughly and pour into a preheated frying pan with oil.
- Put a sliced tomato on top, for example, reduce the heat, cover and keep on fire until cooked. It can be baked in an oven or a slow cooker.
- You can put peeled shrimp, chicken or just pieces of sausage.
