Cakes "Baskets" with BlackBerry Mousse Recipe
Cakes "Baskets" are a delicious and beautiful dessert for every taste. For hot, summer days - a simplified cooking method that does not require baking baskets. Crunchy walnut basket, airy berry-based mousse cream... Tender and unusual dessert! Amazing taste and aroma of colorful blackberries!!!

Ingredients
Baskets:
- 150 gram Almonds
- 100 gram Corn flakes sweet
- 100 gram White chocolate
- 50 gram Milk
BlackBerry mousse:
- 100 gram BlackBerry puree(mashed from the grains)
- 50 gram Sugar
- 2 tablespoons Lemon juice
- 2 teaspoons Gelatin
- 50 gram Water
- 200 gram Cream (33%)
Instructions
- Products for cooking " baskets":
- Melt white chocolate in hot milk. Let the chocolate-milk mixture cool.
- Chop the cornflakes and almonds (separately) and mix with the melted chocolate.
- Divide the resulting mass by the number of baskets ( 6 PCs.) Mould-baskets lined with food wrap from the inside, from the sweet mass form a flatbread, ~ 5-7 mm thick, put inside the basket, well pressing against the walls. Put the baskets in the refrigerator. The chocolate will harden, the baskets will keep their relief shape well.
- Products for making BlackBerry mousse:
- Add sugar and lemon juice to the BlackBerry puree. Soak the gelatin in water. Dissolve the swollen gelatin (microwave 60% = 1 min.), stir in the BlackBerry puree. Whisk the cream into a persistent foam, mix in the BlackBerry puree. Put the resulting cream in a cooking bag and put it in the refrigerator until slightly thickened.
- Free the baskets from the film, fill with BlackBerry mousse cream.
- Top with blackberries and mint leaves.
