Chicken "Jamaica Jerk" in a Wood-Burning Oven Recipe
This is my second recipe with the Jamaica Jerk marinade - the first was pork. Let me remind you that it is based on a combination of herbs, soy sauce and spices such as nutmeg, cinnamon, cloves and cayenne pepper. For chicken, the spice composition is slightly different, but the main components remain unchanged.

Ingredients
- 500 gram Chicken
- 1 bunch Green onions
- 1 bunch Parsley
- 100 ml Vegetable oil
- 1 tablespoon Soy sauce
- 2 teaspoons Cayenne pepper
- 2 cloves Garlic
- 50 gram Ginger
- 1 teaspoon Nutmeg
- 1 teaspoon Paprika sweet
- 1 teaspoon Cloves
- 1 teaspoon Turmeric
- 0,5 teaspoon Cinnamon
Instructions
- All the ingredients, except the chicken, are loaded into a blender, and grind until smooth.
- Remove the skin from the chicken, and make 2 deep cross-cuts on each portion piece.
- Put the chicken in a marinating dish and rub the marinade evenly. Marinate for 12 hours.
- Place on the grill and fry in the oven or on the grill (you can in the oven) at the highest possible temperature, until the marinade begins to burn.
