Currant berries (you can not defrost) chop with a food processor (a knife attachment for chopping).
Add sugar and cottage cheese to the berries, mix the mixture into a homogeneous mass, transfer to a bowl (if desired, you can rub it through a sieve).
Soak the gelatin in milk. Cream (!!! be sure to have a fat content of 33-36%, the fat content of the cream depends on the result of dessert preparation) warm up (do not bring to a boil), pour the swollen gelatin into the cream, stir well. Pour the hot cream (through a sieve) into the berry-curd mass, stirring constantly.
Pour the pannacotta into molds (silicone), put in a cold place to solidify.
Put the finished pannacotta out of the molds on a dessert plate, if desired, you can decorate with frozen currant berries.
