Mushroom Salad Recipe
My aunt shared a recipe for this salad, hence the name. Moderately spicy, spicy vegetable salad.

Cut all vegetables into cubes. Finely chop the greens.
Pour the chopped eggplants with water and leave for 10 minutes.
Pour 2 tablespoons of vegetable oil into a frying pan, put the onion and mushrooms. Fry until soft.
Fry the eggplants in the remaining oil (2 tbsp.). Spread on a napkin, removing excess oil.
Mix sour cream, mayonnaise and mustard in a cup. Add soy sauce. Mix well. Salad dressing is ready.
Put the fried mushrooms, eggplants, tomatoes and greens with onions in a working bowl. Add the prepared dressing. Mix gently.
Serve the salad, adding green onions.
