  1. Clean and gut the fish.
  2. Cut into fillets, removing the backbone bone. Cut into portions. Wash, dry, put skin-side down. Pepper and crumble the Bay leaf. DO NOT ADD SALT! Leave for 30 minutes.
  3. String on a skewer or place in a wire rack. SALT. Brush with vegetable oil.
  4. Fry on gray coals for 2-3 minutes, first, the inside.
  5. Turning several times, bring to readiness. The total time is 10-12 minutes. Blush to Your taste.
  6. Serve hot. Serve with vegetables, seasoned with lemon juice.
