Carp are characterized by good, delicious meat, its only drawback is a lot of small intermuscular bones. So if you are confused, you can safely replace carp with less bony fish, such as Dorado. Today I was lucky enough to buy freshly caught fish and I tried to give it a decent design. The recipe is simple, the fish is prepared quickly. And it turns out both delicious and festive beautiful.
I prepare the necessary products. Carp I have on 1.5 kg.
Fish gut, wash and dry with a paper towel. On one side, I remove the skin along with the scales. On the other side of the skin leave, clearing it of scales. I salt the fish and sprinkle it with olive oil. I put sprigs of rosemary in my belly.
Potatoes are grated on a special grater in thin slices. Salt, add ground garlic and olive oil. Stir.
I transfer the fish to a baking sheet covered with parchment. With the skin side down. On the skinless side, I lay out potato slices, imitating the pattern of fish scales.
Sprinkle the fish on top again with olive oil and send it to a preheated 200-degree oven to bake for 30 minutes. For a more ruddy potato layer, connect the grill for 5 minutes.
