Pre-soak the beans and boil until tender.
Boil hard-boiled eggs, peel.
Peel the pepper from the seeds,
chop the tomatoes and capsicum finely.
Peel the onion and cut it into half rings.
Cut the eggs into cubes.
Mix beans, corn, vegetables and eggs.
Add salt, curry and lemon zest.
Add the oil and vinegar, let the salad brew for 20 minutes before serving.
