Eggplant Salad Recipe
Moderately spicy, hearty, delicious salad! Very tasty salad.
Cook Time 30 minutes
Instructions
Eggplant cut into slices and fry in vegetable oil on both sides. Lay finished eggplant on paper napkins to remove excess oil.
In a salad bowl put the olives, slice the tomatoes thin slices, pepper strips.
Onions finely chop, add oil and salt and pepper. Garlic finely chop, add lemon juice and eggplant. Toss the salad and refrigerate for 20-30 minutes.
