Fried Eggs on Azerbaijan Recipe
Such an interesting name could not pass me by, I love national dishes. They always have something interesting, inviting, a little unusual, but from familiar products. There are a lot of kyukyu options, I have chosen to suit my tastes and products. I tried very hard not to distort the recipe, not to offend Azerbaijan. I also have chureki and tomato salad with sumac, almost an Azerbaijani Breakfast on my Easter table. Treat.

Ingredients
- 3 pieces Chicken eggs
- 1 piece Eggplant
- 50 gram Spinach fresh
- 5-6 twigs Green onions
- 20 gram Butter
- Salt to taste
- Sumac for serving, to taste
- Basil +a pinch of dried, to taste
Instructions
- To prepare the products. Wash the greens, dry them, and peel the eggplant. P.S.: I do not throw away the skins, I dry them, grind them and use them.
- Cut the eggplants and chop them in a chopper. You can scroll through the meat grinder, the grid is large.
- Cut the spinach and green onion feathers, add to the bowl, and chop until smooth. Just a couple of clicks.
- Beat the eggs, again I help the blender attachment whisk.
- Mix egg mass with eggplant and spinach, add dried Basil and salt. In a frying pan, heat the oil, as you can see, the oil is not enough.
- Put the mass in the pan, let it boil, cover with a lid. Reduce the heat to medium and bake for 5-8 minutes.
- When compacting the mass, carefully turn it over and fry for a few more minutes.
- Serve with Basil, sprinkle with sumac.
