  1. Mix the sugar and Melissa with 1 Cup of water in a saucepan.
  2. Put the pan on medium heat and wait for the sugar to completely dissolve. This process takes 3-5 minutes.
  3. Add the hibiscus, reduce the heat and cook for 10-15 minutes.
  4. Pour the syrup into a container of sufficient volume, first removing the leaves of Melissa and hibiscus flowers as desired. (The flowers are edible and can also be added to other dishes. They are a common ingredient in Latin American and Caribbean cuisine.)
  5. Add the lemon juice, a pinch of salt and 3 cups of water, and mix thoroughly. Pour into ice cream molds and place in the freezer for 4-6 hours.
