Meat Tortilla with Eggplant and Pepper Recipe
Meat tortillas with vegetables and cheese are cooked in the oven. Vegetables give a delicious bright color and a new flavor, and cheese and garlic-flavor. This dish will always help out: it turns out to be satisfying, and you don't need a side dish.

Ingredients
Meat tortilla:
- 350 gram Minced meat mutton
- 3 tablespoons Rice
- 1 teaspoon Seasoning ready-made, for lamb
- 0,2 teaspoon Salt
- 0,2 teaspoons Black pepper
- 1 piece Onion
- 3 cloves Garlic
Filling:
- 2 pieces Eggplant
- 1 piece Onion
- 3 cloves Garlic
- 2 pieces Paprika sweet
- 3 tablespoons Vegetable oil
- 200 gram Hard cheese
- 0,2 teaspoons Salt
Additionally:
- 1 tablespoon Vegetable oil
Instructions
- Wash the rice, boil it in a convenient way, and cool it.
- Chop the onion and garlic. Combine the minced meat with the rice, knead, add the onion-garlic mixture, seasoning, salt, pepper, and mix.
- Prepare the filling: chop the onion and garlic separately. Chop the cheese.
- Cut peppers and eggplants into cubes.
- In vegetable oil, fry the onion for three minutes, add the eggplant and peppers, continue to fry, add salt. At the end, add the garlic. Prepare meat tortillas: divide the meat base into four parts, grease the baking sheet with vegetable oil and form tortillas one centimeter thick. Preheat the oven to 200 degrees.
- Mix the vegetable filling and put it on the meat tortillas, spread the cheese on top. Bake at 200 degrees for 15 minutes.
- Serve hot.
