I suggest cooking a delicious salad of eggplant, tomatoes and green onions. A very tasty salad with fresh bread or pita bread.

Cut the eggplant into slices about 1 cm thick and fry in a dry frying pan or grill until soft, then cut into medium-sized pieces..
Dry the almonds in the same pan or grill (I had chopped almonds, if you use peeled almonds, then after frying it should be chopped with a knife).
Cut the onion into rings.
Cut the tomatoes arbitrarily.
