Glazed Salmon with Mint Pea Puree Recipe
Quite simple to prepare and at the same time having a wide color and taste palette – this dish can be classified as dishes for "special occasions" and festive events. The combination of pea puree, cream and mint was a pleasant discovery for me!

Ingredients
- 600 gram Salmon
- 100 milliliters Soy sauce
- 3 teaspoons Honey
- 3 tablespoons Mustard (Dijon)
- 2 tablespoons Balsamic
- 30 gram Butter
- 1 piece Onion
- 400 gram Green peas
- 10 twigs Mint
- 100 ml Cream (20%)
- Salt
- Black pepper
Instructions
- Prepare the marinade: mix honey, Dijon mustard, balsamic vinegar, soy sauce and ground black pepper. The proportions can be adjusted according to your taste preferences!
- Marinate the fillets in half of this mixture for at least an hour.
- Preheat the oven to 200 C. Put the fish in a baking dish. Using a cooking brush, apply a small amount of marinade. Cover the mold with foil and put it in the oven for 12 - 15 minutes. Remove the foil, apply another layer of marinade and bake for another 10 minutes until a crust forms.
- To prepare mint-pea puree, finely chop the onion. Heat 1 tablespoon of butter in a frying pan and fry the onion until transparent. Add the peas, warm up for a few minutes. Transfer the mixture into the bowl of a blender and grind together with the mint.
- Add hot cream, whisk until fluffy.
- To serve dishes, use the ring to put the mashed potatoes on a plate. Put the salmon fillet on it. Then lay out the dried tomatoes and garnish with lettuce leaves.
