Mini-Quiche of Rye Bread with Fish Recipe
I want to present to Your court one wonderful dish that is perfect for Breakfast, a snack at home and in nature, as well as for a festive table. And, despite the relatively large number of step-by-step photos, it is quite easy to prepare!

Ingredients
The base:
- 8 slices Bread Rye (Borodinsky type), square
- 200 gram Fillet fish hake
- 1 piece Bulgarian pepper
- 80 gram Hard cheese
- Salt to taste
- Black pepper to taste
Filling:
- 2 pieces Chicken eggs
- 40 ml Cream (20%)
- 3 twigs Thyme fresh
- 1 teaspoon Oregano
- Salt to taste
Instructions
- Defrost the hake in a slow way, transferring it from the freezer to the refrigerator overnight. We mill and measure 200 g of fillet. I just fried the rest of the hake. You can take fillets of any other white fish.
- Remove the skin from the fillet, cut it into random pieces and send it to the blender bowl.
- Add salt and black pepper.
- Punch everything until smooth.
- Bulgarian pepper cut into cubes of 5 mm.
- Cut the crusts from the bread.
- Roll out with a rolling pin.
- You can also take white toast bread. It will be easier to work with, it is less crumbly and more elastic. But I just like rye more.
- Put the bread in cupcake molds. Black bread will break in some places, including at the bottom. It's not a big deal. Just close up these places with a baby. I covered the bottom with crumbs and rammed everything with a pestle from a mortar.
- Now we are preparing the fill. With thyme, tear off the leaves.
- Break 2 eggs.
- Add salt, thyme and dried oregano.
- Cream. I have 20%
- Everything is interrupted until smooth and light foam with a mixer or blender.
- Grate the cheese on a coarse grater.
- Start assembling mini-quiches. At the bottom of our bread baskets we spread minced fish.
- Put the pepper cubes on top.
- Fill everything with egg filling.
- Sprinkle with cheese.
- And send it to a preheated 180 degree oven for 15-20 minutes. I have an electric oven with convection, so it took me 15 minutes. You are guided by the features of your oven.
