Pickled Pumpkin with Cherry and Nuts Recipe

Ingredients
- 200 gram Pumpkin
- 6 pieces Cherry tomatoes
- 1/2 bunch Arugula
- 1/2 teaspoons Coriander
- 15 gram Ginger
- 2 teaspoons Soy sauce
- 2 teaspoons Balsamic
- 2 tablepsoons Vegetable oil
- 2 teaspoons Honey
- 1 handful Pine nut
Instructions
- Cut the pumpkin into strips using a vegetable peeler.
- For the marinade, mix soy sauce, balsamic, honey, vegetable oil, ground coriander, grated ginger root. Marinate the pumpkin in it for about an hour (the longer, the softer the pumpkin).
- Rinse the arugula with water. Cut the cherry tomatoes in half. Put the arugula on a plate, then the pumpkin and cherry. Garnish with pine nuts and mint leaves.
