Potato Salad with Radish and Apple Recipe
The freshness of apples, the sharpness of radishes and salad dressings, the juiciness of potatoes - this salad can be served instead of a side dish. Not quite the usual combination of products, but the taste did not disappoint us.

- Boil the potatoes in salted water, cool slightly, peel and cut lengthwise into 4-6 pieces.
- At the same time, you can prepare salad dressing: peel the onion, finely chop, pour in the broth, bring to a boil and cook for 5 minutes. Then add mustard, vinegar, salt to taste and more black pepper. Beat the puree with a blender. Add vegetable oil and mix. Immerse the prepared potatoes in the hot dressing and leave for an hour. Periodically, during this time, gently stir the potatoes.
- Wash the arugula, dry it, cut it, add it to the cooled potatoes.
- Cut the peeled radish into thin slices, add to the salad.
- Apples are peeled, cut into 4 parts, then into thin plates. Add to the salad.
- Mix all the vegetables carefully, add salt and pepper to taste, add if necessary.
