Ingredients
For the dough:
- 75 gram Butter
- 110 gram Flour wheat / Flour
- 35 gram Almond flour
- 35 gram Sugar
- 25 gram Chicken egg
- 1 gram Salt
- 1 piece Orange zest
For the filling:
- 350 gram Berries
- 20 gram Corn starch
- 60 gram Sugar
- 0,3 teaspoon Seasoning
Instructions
- Ingredients you will need: Butter with a fat content of 82%, cold. Almond and wheat flour. Salt and sugar. If the eggs are large, you can just yolk. Orange zest-optional.
- Combine flour, salt, sugar and cold butter.
- I grind it into a crumb with my hands. You can use a blender with knives.
- Add the zest (only the bright part) and eggs (or rather the floor) and quickly knead the dough.
- It should turn out plastic, uniform, not sticky.
- Between two sheets of parchment or Teflon mats, roll out the dough to a thickness of 5 mm and to the desired size.
- The size of my form is 21 cm in diameter, height 3. Remove the dough for 1 hour in the refrigerator.
- Then I put the cooled dough in the form, level it out and put it in the refrigerator until the filling is ready.
- I collect the scraps in a ball and put them in the freezer.
- For the filling, I will use equal proportions of raspberries and cherries, but you can take absolutely any berries, frozen or fresh. If frozen, as in my case, I throw it on a sieve to drain the juice. Also cornstarch, sugar. Spices-optional. I have: cinnamon, nutmeg, ginger.
- Everything is connected, mixed...
- The filling is ready.
- Spread on the cooled dough, level.
- From above I RUB on a large grater a frozen lump of dough. Send in a preheated oven to 170 degrees, for 40-45 minutes.
- But it is better to focus on a beautiful, Golden crust. Allow to cool, remove from the mold.
- And you can invite everyone to tea!
- Tender, thin, crispy dough and a lot of flavorful, bright, slightly sour filling! It's already quite summer-like!
- Quick, simple, delicious! Everyone has a great mood!
