Salad with Duck and Pear Recipe
An exquisite salad with baked duck and juicy sweet pear. Its taste is perfectly complemented by a slight bitterness of cranberries and the piquancy of blue cheese.

Ingredients
Salad
- 250 gram Duck breast
- 2 tablespoons Soy sauce
- 4 tablespoons Orange juice
- 40 gram Onion red
- 120 gram Pear
- 70 gram Blue cheese
- Cranberries (defrost, if frozen)
Dressing
- 2 tablespoons Olive oil
- 1 tablespoon Soy sauce
- 1 tablespoon Orange juice
- 1/3 teaspons Lemon zest
- 1 teaspoon Mustard
- 1 pinch Seasoning (Italian herbs)
Instructions
- Mix 2 tablespoons of soy sauce and 2 tablespoons of orange juice, marinate the duck breast in this mixture for half an hour. Wrap it in foil and put it in a preheated 200°C oven. Bake for 30 minutes, cool completely in foil, cut into thin slices.
- Cut the red onion into thin half rings, pour 2 tablespoons of orange juice and, slightly kneading with your hands, leave to marinate for 30 minutes.
- Ripe juicy pear cut into thin slices.
- For dressing, mix soy sauce, orange juice and zest, butter, grainy mustard and Italian herbs.
- Put slices of pears and duck, red onion on a plate. Cut or break arbitrarily blue cheese and put it on top, also put cranberries on top and pour the dressing.
