Ingredients
Nut biscuit:
- 120 gram Walnuts + 60 grams for dusting the sides of the cake (optional)
- 180 gram Flour wheat / Flour
- 1 pinch Salt
- 1 teaspoon Baking powder
- 5 pieces Chicken eggs
- 180 gram Sugar
- 75 gram Honey
Curd cream:
- 375 gram Sour cream
- 300 gram Cottage cheese
- 150 gram Sugar
- 1,5 teaspoons Vanilla sugar
- 500 gram Strawberries + for cake decoration
Glaze:
- 4 tablespoons Sugar
- 3 tablespoons Cocoa powder
- 60 gram Butter
- 3 tablespoons Sour cream
Instructions
- Nut cookies: Peel walnuts.
- Chop into small pieces in a convenient way.
- Mix flour, chopped nuts, a pinch of salt and baking powder for the dough in a bowl. Mix it.
- Separate the whites from the yolks in different dishes. Add 50 g of sugar to the proteins and whisk.
- The protein mass should maintain a good shape.
- Add the remaining sugar and honey to the yolks. And whisk until the mass becomes light and homogeneous.
- Pour the nut-flour mixture into the yolk and add a little whipped whites. Mix gently.
- Then, after 3-4 hours, gently whisk the remaining egg whites several times.
- We spread the dough into a mold (20 cm in diameter, having previously covered the bottom with parchment and lightly greased the sides with vegetable oil) and put it to bake in a preheated 180 degree oven for 50-55 minutes, check the readiness with a wooden skewer.
- Remove the finished biscuit from the oven and let it cool and infuse.
- Cut the cooled biscuit into 3 parts.
- Cottage cheese cream: Mix cottage cheese, sour cream, sugar and vanilla sugar in a bowl.
- Whisk thoroughly until smooth.
- Glaze: mix sugar and cocoa, mix.
- Add the pieces of butter and sour cream.
- Put on a small fire and, stirring constantly, bring the glaze to a homogeneous, smooth state. Remove from heat and let cool.
- We collect the cake: nut cake, put the strawberries cut in half on top.
- On top - cottage cheese cream.
- Then a nut pie, strawberries again.
- Lay out a layer of cream cheese (leave 2-3 tablespoons of cream for the sides of the cake).
- On top is a walnut sponge cake.
- Decorating the sides and top of the cake is a matter of taste and imagination. Tell us your version))) The sides of the cake were covered with cottage cheese cream and sprinkled with crumbs (pieces chopped in a blender, cut from the top of the biscuit + walnuts).
