Air Autumn Cheesecakes with Apples Recipe
Apples are one of the favorite all-season ingredients when baking pies. But it is home-made autumn apples that are the most fragrant, ripe, saturated with all summer flavors-flavors. Ingredients
Dough:
- 1 piece Egg yolk
- 120 gram Flour wheat / Flour
- 50 gram Sugar powder
- 60 gram Butter
- 0,5 teaspoon Baking powder
- 0,5 tablespoons Sour cream
Curd layer:
- 500 gram Cottage cheese
- 125 gram Sour cream (20-30%)
- 60 gram Butter
- 130 gram Sugar
- 3 pieces Egg
- 2 pieces Egg yolk
- 30 gram Corn flour
- 8 gram Vanilla sugar
- 500 gram Apples
Instructions
- Add powdered sugar and baking powder to the sifted flour and mix thoroughly.
- Put the yolk of one egg in the flour mixture (the protein will be added to the curd layer), sour cream and sliced butter.
- First chop all the products with a fork, and then quickly mix with your hands. You do not need to knead for a long time. Assemble the dough into a ball, send it to the refrigerator for 1 hour. Get the products for the curd layer from the refrigerator.
- After an hour, get the dough, roll it out according to the size of the mold (I have 26 cm) on a table dusted with flour. Put it in a mold and put it in the oven at 180-200 degrees (look at your oven) for 15 minutes. During this time, peel the apples for the filling (500 g), grate on a medium grater. You can sprinkle with lemon juice.
- The resulting cake is removed and cooled. Meanwhile, beat the soft butter and sugar with a mixer.
- Add the yolks and whisk.
- In the resulting mass, mix the cottage cheese (you can rub it through a sieve).
- Add sour cream and corn flour.
- Whisk the whites (3 pcs.) to a strong foam and gently mix with the curd mass.
- Put the cooled cake in a split mold, put a layer of grated apples on it, seal it slightly. On top - curd mass. Put in the oven at 180 degrees for 50-60 minutes.
- While the pie is baking, cook the apples in caramel. In a frying pan, dissolve the butter and sugar. Put the peeled apples and cook over medium heat until they are lightly browned on one side and the other.
- We take the pie out of the oven, let it stand for 10-15 minutes. then walk with a knife along the walls of the mold, separating them from the cake. Remove the bumpers. Put the apples on top of the pie. You can cover the entire surface. I only managed to make a rim. Pour the syrup over the apples.
- Allow the cake to cool completely. We bring beauty in any way convenient for you. If there is a pie on the same day, the filling will be softer. The next day it will thicken. It will be delicious anyway! Everything is warm in the pre-winter!!!
