Brownies Cheesecake with Cookies Recipe
Brownie is a kind of chocolate cake with a characteristic brown color. It is prepared in various ways. We suggest you use our simple brownie cheesecake recipe by adding Oreo cookies to it. A tender, soft, melting pie in the mouth will not leave anyone indifferent.

Ingredients
Brownies:
- 125 gram Dark chocolate
- 125 gram Butter
- 100 gram Flour wheat / Flour
- 3 pieces Chicken eggs
- 180 gram Sugar
- 2 packs Vanilla sugar
- 1 pinch Salt
Cheesecake:
- 600 gram Cream cheese
- 260 gram Sugar
- 30 gram Corn starch
- 1 pack Vanilla sugar
- 2 pieces Chicken eggs
- 160 gram Cream
- 60 gram Dark chocolate
Additionally:
- 325 gram Cookies Oreo
Instructions
- Take the cakes. First, we take out a detachable mold with a diameter of 26 cm and carefully wrap it with foil. Preferably in several layers. The foil should be a large enough piece, if you use several small ones, water will seep into the joints. I also have a silicone one-piece mold with a diameter of 26 cm, and sometimes I insert a detachable mold into it, which I use for baking. It is also a good protection against water ingress when baking cheese. Grease the mold with oil.
- Melt the butter and chocolate in a water bath or in a microwave oven.
- Beat the eggs thoroughly with sugar and vanilla sugar. Add the melted chocolate with butter and reduce the speed of the mixer.
- Sift the flour with salt and mix at a minimum speed with a mixer or spatula.
- The dough turned out amazing - airy, like mousse. We put it in a mold and bake it in a preheated 160 degree oven for 25 minutes. I use only a ring from the mold, so I put a small baking tray under the mold to easily transfer the mold to the oven.
- Now prepare the cheesecake. Whisk cream cheese with sugar, vanilla sugar and corn starch. Add one egg, beating well each time.
- Add cream, reduce the speed of the mixer, mix, but do not beat.
- Put a layer of cookies on the brownies. Spread the curd mixture on the cookies, but leave a little, about a cup.
- Melt 60 g of chocolate, mix with the rest of the curd mixture. Spoon the chocolate part over the white part and make the stains with a knife, gently mixing both mixtures.
- Transfer the mold to a larger baking sheet and pour hot water up to about half of the mold (or slightly higher). Bake in a preheated 160 degree oven for about 1 hour and 15 minutes. Remove from the oven and leave to cool, put in the refrigerator for at least 4 hours.
- Carefully transfer the cheese to a serving dish, remove the board from the mold. Chop the cookies, you can use a rolling pin, you can use a blender. And sprinkle the edges with crumbs. Before that, lubricate 2 tablespoons of cream, but not necessarily, cookies are well stored without it.
