A very tender, very satisfying, moderately sweet dessert, in fact - a cheesecake without baking. Cooking is not very difficult, the main thing is not to get confused. I was preparing for my birthday, my daughter did not try it at the table, she took half of the cake with her. Late at night I get a message: "Amazing cake! I hate everything myself.

Ingredients
Inner layer:
- 50 gram Cookies
- 60 gram Mascarpone
- 5 gram Gelatin
- 40 gram Sugar powder
- 35 gram Yogurt
- 5 drops Vanilla essence
- 85 gram Cream (33%)
Outer layer:
- 50 gram Cookies
- 90 gram Butter
- 150 gram Mascarpone
- 70 gram Hard cheese preferably Maasdam or Emmental
- 60 gram Milk
- 90 gram Sugar powder
- 15 gram Gelatin
- 7 drops Vanilla essence
- 0,5 teaspoon Turmeric or food-grade orange dye
- 200 ml Cream (33%)
Instructions
- The cooking time is indicated without taking into account the cooling time. For both layers, grind 100 g of cookies of the "Jubilee" type or dried sponge cake into crumbs. Divide the crumbs in half.
- Whisk 285 ml of heavy cream with 3 tablespoons of powdered sugar for both layers. Measure the total weight of the whipped cream 85 g for the inner layer.
- We prepare the inner layer. Add 30 g of mascarpone to 50 g of cookie crumbs.
- Mix and place in a ring (mold) with a diameter of 10 cm, tamping. We send it to the cold for 30 minutes. Soak 5 g of gelatin in 30 ml of cold water for 15 minutes. Then put it in the microwave for 10 seconds and dissolve the gelatin.
- In a bowl, put the mascarpone and powdered sugar, mix.
- Add yogurt and vanilla essence and mix. Add gelatin and whipped cream and mix again.
- Pour into a mold, flatten and put away in the cold for 1 hour.
- We prepare the outer layer. Pour 15 g of gelatin into 90 ml of cold water and set aside. Add the soft butter to the cookie crumbs and mix well.
- Transfer the mixture to a mold with a diameter of 15 cm and tamp the bottom. Remove to the cold for 30-40 minutes. If we use a mold with a diameter of 12-13 cm, we need to increase the height of its walls to 12 cm by laying a ring of dense plastic around the perimeter. If the shape is 15-16 cm in diameter and 12-13 cm in height, then you can do without a plastic ring.
- Cut the cheese into small cubes or grate it on a fine grater, put it in a blender bowl, pour in the milk and add powdered sugar, chop it.
- Put the mascarpone in a glass bowl, add the crushed cheese mass and put it in the microwave for 30 seconds. Put the soaked gelatin in the microwave for 20 seconds and dissolve it.
- Pour the gelatin into a bowl with mascarpone, add the whipped cream and vanilla essence and mix. Add turmeric or food coloring and knead until the cheese color is obtained.
- Pour half of the mass onto a layer of cookies with butter and put in the freezer for 20 minutes.
- In a large mold, we transfer the frozen inner layer from a small mold to the center, removing it from the ring or mold.
- Put the remaining cream cheese mixture on top and leave in the cold for 3 hours or more.
