Ingredients
Dough:
- 50 gram Butter
- 50 gram Sugar
- 1 piece Chicken egg
- 70 gram Flour
Marshmallow:
- 10 gram Agar-agar
- 1 piece Apple
- 175 gram Sugar
- 250 gram Water
- 2 pieces Chicken eggs
- 1 teaspoon Lemon juice
Instructions
- Grind butter at room temperature with sugar, add egg, beat until sugar dissolves, add flour and mix. The dough will turn out to have the consistency of thick sour cream.
- Take the upper part of the split mold and draw a contour on the paper.
- Place the dough in a circle.
- Bake at 230 degrees for 10 minutes. Cool and place in a detachable mold.
- Soak the agar-agar in water.
- Bake 1 large or 2 small apples in the oven or microwave, grind the pulp with sugar in a blender.
- Bring water with agar to a boil, boil for a few minutes, add applesauce with sugar, boil for a few minutes on low heat. Leave to cool a little.
- Whisk 2 whites into a strong foam. Pour the agar-apple mixture cooled to 80 degrees into the proteins in a thin stream, continuing to beat. At the end, add lemon juice.
- Put most of the marshmallow mass into a mold. Wait a few minutes to begin to grasp a little. Decorate the pastry bag with the remaining marshmallow mass.
- After drawing a knife along the edge of the mold, lay out the cake. You can serve.
