Muffins "Cranberry Blast" Recipe
Delicate muffins with a pleasant creamy note and vanilla flavor. The unique sourness of cranberries harmoniously combines with a light, sweet crumb. Pastries are ideal for a festive and family tea party, as well as for treating guests.

Ingredients
- 75 gram cran
- 35 gram Powdered sugar 25 g-for cranberries, 10 g-for sprinkling muffins
- 260 gram Flour wheat / Flour
- 0,8 pack Baking powder the package is designed for 500 g of flour
- 1/4 teaspoon Salt
- 1 piece Chicken egg
- 75 gram Sugar
- 1/4 teaspoon Vanilin I have 0.5 tsp vanilla paste. You can use vanilla, and vanilla sugar, and vanilla essence
- 150 ml Milk
- 60 ml Vegetable oil any refined, I have-olive
Instructions
- Sprinkle the cranberries with powdered sugar, mix and set aside.
- Mix the sifted flour, baking powder and salt in a large bowl.
- In another bowl, break the egg, add sugar and add vanilla paste.
- Beat well until the sugar dissolves.
- Continuing to beat the mass at low speeds of the mixer, pour in the milk and vegetable oil.
- Make a recess in the center of the dry ingredients, pour in the egg-milk mixture.
- Stir only with a spoon until all the ingredients are mixed. Add the berries and gently knead the dough.
- The cells of the muffin mold are lined with paper capsules and filled with 1/2 volume dough. You can use silicone molds.
- Bake in a preheated 180 degree oven for 20-25 minutes (focus on your oven).
- Transfer the muffins to the grill to cool.
- Sprinkle the muffins with powdered sugar and decorate to your liking. I used candied cranberries.
- To prepare, mix 60 g of granulated sugar with 60 ml of water in a small saucepan. Cook over medium heat until the sugar dissolves, shaking the pan slightly from time to time. Pour the syrup into a heatproof bowl and let cool for 10 minutes. Add the cranberries and mix gently. Cover the bowl with a lid or cling film and leave overnight in the refrigerator. Pour 35 g of granulated sugar into a flat plate. Carefully discard the cranberries in a colander, then roll them a couple of times in sugar. Place the candied cranberries on baking paper and let dry for an hour. It turns out a beautiful, bright decoration for festive desserts and cocktails.
