This simple but elegant salad is perfect for a romantic dinner! It perfectly combines the light bitterness of arugula, the sweetness of pear and the piquancy of cheese.
Wash the pears, dry them, peel and stone them and cut them into 8 slices.
Melt butter in a frying pan, add brown sugar and rosemary. Let the sugar dissolve, stirring. Fry the pear slices until a caramel crust forms and carefully place them on a plate.
Wash and dry the arugula.
Cut the cheese into slices, walnuts can be calcined if desired.
To prepare the sauce: mix 1 tsp lemon juice, 1 tsp honey, 1 tbsp vinegar and 4 tbsp. put arugula on a dish, then slices of caramelized pears, cheese and nuts.
Pour the sauce over the salad.
This salad is best served in portions, and not on a regular dish.
