Fish in crazy water (Pesce all’acqua pazza) – an old dish of the Italian poor. There are two similar theories about this strange name. According to one of them, due to the fact that salt was not affordable for the poor, fishermen began to cook freshly caught fish in a sauce of sea water and wine. According to the second theory, giving most of the wine produced to the landlords, the peasants began to make a certain drink from various remnants of wine production and water. They called it Acqua pazza (crazy water) and from it came the name of the fish. Whatever it was, the dish is simple, and the fish as a result is tender and juicy.
