Mackerel Rolls with Rice and Buckwheat Recipe
Two different dishes, two flavors. I suggest you cook this simple dish with me. The fish turned out to be spicy and fragrant, thanks to a mixture of Provencal herbs and lemon zest, rice and buckwheat gave a delicate sound to the dish.

Ingredients
- 2 pieces Mackerel
- 1 tablespoon Rice
- 1 tablespoon Buckwheat
- 1 piece Carrot
- 1 piece Onion
- 1 teaspoon Seasoning (Provence herbs)
- 3 pieces Champignons
- 1 teaspoon Lemon zest
- Salt
- Black pepper
- Vegetable oil
Instructions
- Ingredients for mackerel rolls. Gut the mackerel, remove the spine and fins, remove the tail.
- Grate the carrots on a Korean grater.
- Cut the onion into small cubes.
- Finely chop the mushrooms.
- Put the onion and carrot in the pan.
- Add a mixture of Provencal herbs. Add vegetable oil, simmer until the vegetables are soft.
- Onions and carrots are fried.
- Put the mushrooms in a frying pan, add vegetable oil. Lightly fry the mushrooms.
- Add the rice to the bowl. So, the rice is washed, boiled until soft in salted water, then washed again in cold water.
- Pour buckwheat into a bowl. Wash the buckwheat, boil until half-cooked in salted water.
- Grate the lemon zest on a grater.
- Rice and buckwheat porridge are ready.
- To prepare mackerel for meatloaf: pepper and salt to taste. Put a thin layer of boiled rice on the carcass.
- Add lemon zest to the fried vegetables. Stir the resulting mixture.
- Lay out a layer of browned onions and carrots.
- Roll up the roll, the roll can be tied with a thick thread or carefully pricked with toothpicks. Formed mackerel roll with rice.
- Season the mackerel with pepper and salt to taste.
- Put a small amount of onions and carrots.
- Put a thin layer of boiled buckwheat.
