Pancakes from the Liver Recipe
The recipe for pancakes is simple, but it's not a shame to serve them on a festive table. Moreover, the simple cooking process has been completely simplified, now the meat grinder has been replaced by a blender or food processor, into the bowl of which you can add all the ingredients at the same time. Voila, and a delicious snack is ready.

Ingredients
- 1000 gram Beef liver
- 3 pieces Onion
- 2 pieces Carrots
- 4 tablespoons Semolina
- 0,75 teaspoon Soda
- 4 pieces Chicken eggs
- 300 gram Sour cream
- 100 gram Hard cheese
- 100 ml Water
- Salt to taste
- Black pepper to taste
- Vegetable oil for fry
Instructions
- Cleanse the liver of fat, ducts and tendons. Cut into pieces. Peel one onion. Put it in the bowl of the food processor, I have a cooking assistant.
- A few seconds - and the homogeneous mass for pancakes is ready.
- Pour the liver mass into a bowl.
- Add eggs, semolina, salt, pepper and soda, mix well and leave for a few minutes so that the semolina swells.
- Fry in vegetable oil on both sides.
- Peel the remaining onions and carrots.
- Using a food processor, using a grater attachment, grate the carrots on a coarse grater.
- I didn't bother with onions either and entrusted it to a food processor using a grater attachment.
- I stewed onions and carrots in vegetable oil.
- I put the pancakes in a baking dish, sprinkling them with fried onions and carrots.
- I added 100 ml of water to the sour cream, salted and poured the pancakes. Put it to bake in a preheated 180 degree oven for 20 minutes.
- 5 minutes before cooking, sprinkle with grated cheese.
