Baking with jam is very popular in the fall. Fresh berries are no longer available, everything is frozen for future use or cooked in the form of jam. I offer a cozy home-made cottage cheese pie to the tea table. Each piece of pie contains small “containers” filled with delicious strawberry jam, and the pie dough is rich, dense, and not very moist. It tastes like a cross between a cupcake and a delicate shortbread.
Any casserole or curd is a bit magical. Yes, Yes! Because it is prepared mainly thanks to our intelligence, imagination and… a little bit of the contents of the refrigerator.
Delicious, tender casserole that is loved by both adults and children. The casserole turns out not only delicious, tender, but also very useful! There’s NOT a gram of sugar in here! It is better to serve it warm, and for Breakfast, and for dinner, and as a dessert for coffee or tea. To make the casserole even more delicious and beautiful, I decorated it with sesame seeds and flax.

Mexican curd flan is essentially a curd casserole, which in its texture turns out to be very airy and soft. Added condensed milk changes the taste dramatically. Cottage cheese in it is not so strongly felt and the total mass becomes more tender. An additional flavor note brings caramel and, I also added lemon zest.
These rolls are a cross between baked cheesecakes and cottage cheese bagels. Delicious on the day of baking, especially while warm. Perfectly combined with any berry, cream sauce or just sour cream. And they are good in themselves!

Of course, then there was no curd cheese, but there were cottage cheese and sour cream. This option is very similar to the one from childhood.
