Cottage Cheese Biscuit "Summer Mix" Recipe
For the first time I learned about a biscuit with fruit from "Burda", back in the last century. I can't count how many of them I've made since then, many and different. Today with strawberries and peaches, on cottage cheese dough... Great treat for tea.

Ingredients
Dough:
- 100 gram Cottage cheese 5-9%
- 20 gram Flour wheat / Flour
- 70 gram Butter
- 1 piece Egg yolk
- 8 gram Vanilla sugar
- 1 teaspoon Baking powder under the knife
- 1 tablespoon Cream for lubrication
- Salt to taste
Filling:
- 200 gram Strawberries
- 1 piece Peach
- 2 tablespoons Sugar powder
- 1 tablespoon Brown sugar
- 1 tablespoon Starch
Instructions
- In a bowl, mix the flour, baking powder, vanilla sugar and salt.
- Grate cold butter, add cottage cheese and yolk.
- Quickly knead the dough, wrap it in cling film and put it in the refrigerator for 30 minutes or 10 minutes in the freezer.
- Before forming, turn on the oven to warm up. Wash and dry the strawberries and peaches, cut them.
- Roll out the dough in a circle. Mix the starch and 1.5 tbsp powdered sugar. Stepping back from the edges, the dough is powdered with a mixture of starch (2/3).
- Spread out the strawberries and peaches, sprinkle with brown sugar, with the remaining starch mixture.
- Wrap the edges of the dough, forming a biscuit, grease the sides with cream.
- Bake for 20-25 minutes at 190 degrees, until nicely browned. Cool the finished biscuit slightly on the grill.
- When serving, dust with powdered sugar.
