Hungarian Cheese Cakes with Caramelized Pears Recipe
What we call Hungarian cheesecakes is called turos taska in Hungary, which translates as "knot" or "purse" with cottage cheese. A very accurate name, because these buns with the corners of the dough raised and connected at the top, behind which the filling is hidden inside, really resemble a bundle with belongings. Ingredients
- 500 gram Puff pastry
- 2 pieces Pears
- 200 gram Cottage cheese
- 5 tablespoons Sugar
- 0,5 teaspoon Vanilin
- 3 pieces Egg yolk
- 20 gram Butter
- 0,5 teapoon Lemon zest
- Sugar powder to taste
Instructions
- Rub the cheese through a sieve. Add the yolks, sugar, vanilla, and whisk until smooth. Add the lemon zest and stir.
- Peel and core the pears, cut into small cubes.
- Melt the butter in a frying pan. Pour 4 tablespoons of sugar evenly, without stirring, melt it. Add the sliced pear, mix gently so that each piece of fruit is covered with melted sugar. Fry for 1-2 minutes, remove from heat, cool.
- Defrost the dough. As a rule, there are 2 layers of 250 g dough in a package. Cut each layer into 4 squares. In total, we will get 8 pieces.
- We roll out each square even more, moving the rolling pin only in one direction. So the dough will retain its layering.
- Put 1-2 tablespoons of cottage cheese filling in the middle of each square, put 1 tablespoon of caramelized pear on top.
- Lift up the corners of the dough squares and connect them crosswise. Pinching of seams.
- We cover the baking sheet with baking paper and spread our cheesecakes on it.
- Lubricate the cheesecakes with a drop of egg yolk beaten with water. Bake in a preheated 180°C oven until golden brown, about 10-15 minutes.
- Serve the cheesecakes, sprinkled with powdered sugar if desired. We make these wonderful cheesecakes!
