Eggplant, Chicken and Tomato Pie Recipe
I was interested in the magazine recipe for an open pie, in which the dough is prepared on white table semi-sweet wine... I've never tried it and decided! The filling was prepared taking into account the tastes of my family, so the hit turned out to be 100%: smoked chicken breast, vegetables, cheese and herbs! It turned out delicious, satisfying and rich!

Ingredients
Dough:
- 300 gram Flour wheat / Flour
- 120 ml Semi-sweet white wine
- 1 pinch Salt
- 3 tablespoons Vegetable oil
- 3 pieces Egg yolk
Filling:
- 160 gram Cheese hard
- 250 gram Eggplant
- 250 gram Chicken fillet smoked
- 5 twigs Dill
- 5 twigs Green onions
- 200 gram Tomato
- Salt to taste
- Black pepper to taste
Casting:
- 3 pieces Chicken egg
- 3 tablespoons Sour cream
- Salt to taste
- Black pepper to taste
Instructions
- For the dough: in a bowl, mix flour, wine, a pinch of salt, egg yolks and vegetable oil. Knead the dough (if necessary, you can add a little wine / flour if the dough does not gather into a ball).
- Form a ball of dough, wrap it in foil and put it in the refrigerator for at least 1 hour (I prepared the dough in advance in the evening and put it away overnight).
- For the filling: while the dough is cooling, cut the eggplants into thin circles, put them on a baking sheet covered with parchment or a baking mat, sprinkle a small amount of vegetable oil on top and send them to a preheated 180 degree oven for 10 minutes. Then remove from the oven and let the eggplants cool.
- Cut the smoked chicken breast into cubes, tomatoes into thin slices.
- Finely chop the dill and the green part of the onion.
- Grate the cheese on a coarse grater.
- Remove the dough from the refrigerator. You can roll out the dough on a sheet of parchment in a circle and put it into a mold or distribute it with your hands along the bottom and walls of the mold, forming high sides (I prefer the second option). Prick the dough with a fork (lightly lubricate the bottom and walls of the mold with vegetable oil, the diameter of the mold is 20 cm).
- Sprinkle the bottom of the pie with cheese.
- Then - eggplant slices, season with salt and black pepper.
- Sprinkle the eggplant with cheese. On top - pieces of smoked chicken breast.
- Sprinkle dill and onion on top. Then - thin slices of tomato.
- And sprinkle cheese on top.
- To pour: in a bowl, mix eggs, sour cream and salt / pepper to taste. Mix thoroughly with a whisk.
- Carefully spread the top of the pie over the entire surface.
- Leave the pie to stand for another 10-15 minutes so that the filling impregnates the filling. Then we send it to bake in a preheated 180 degree oven for 40-45 minutes (pay attention to the ruddy sides of the pie and the golden top).
- We take the finished cake out of the oven and let it cool down.
