Catfish Steak with Vegetables Recipe
Autumn spoils us with an abundance of juicy vegetables. I suggest you cook a catfish steak with caramelized onions and a side dish of vegetables. The most important thing is not to overcook the vegetables, they should turn out "al dente".
Servings 4
Cook Time 60 minutes
Ingredients
- 1 piece Fish Catfish
- Salt to taste
- Black pepper to taste
- 1 teaspoon Seasoning (Italian herbs)
- 4 tablespoons Vegetable oil
- 300 gram Cauliflower
- 300 gram Broccoli
- 2 pieces Carrots
- 5 pieces Onion red
- 4 cloves Garlic
- Orange
- 1 stick Cinnamon
- 1 piece Star anise
- 1 teaspoon Ginger (ground)
- 1 teaspoon Honey Can be replaced with maple syrup or brown sugar
- 1 tablespoon Brown sugar
- 1 teaspoon Mustard (seeds)
Instructions
- First prepare the catfish. Clean the fish, gut and cut into portions. I left the head and tail in the broth.
- Divide the cauliflower and broccoli into inflorescences.
- Peel the carrots, onions and garlic.
- Cut the carrots into cubes.
- Onion - half rings, the thinner, the better.
- Finely chop the garlic.
- Brush the fish with oil and fry in a grill pan for 5-7 minutes on each side, until golden brown.
- Season the steaks with salt and pepper, Italian herbs and one clove of garlic (the rest of the garlic will be needed for vegetables). Place in a preheated 200 degree oven for 20 minutes.
- Pour cauliflower and broccoli with cold water and put on high heat. As soon as the water boils, discard the cabbage in a colander and lower it into cold water. Drain the water and dry the inflorescences with a paper towel.
- Pour vegetable oil into a preheated frying pan and fry the garlic.
- Add the cauliflower, add salt and fry until tender for 3-4 minutes. Put it out.
- Fry the remaining vegetables in the same pan. Put the carrots in a frying pan, season with salt and pepper, add the juice of half an orange with the pulp, a stick of cinnamon, star anise, honey and season with ground ginger. Cook over medium heat, stirring all the time, for about 12 minutes. Put it out.
- Make the fire stronger and fry the red onion. As soon as the onion starts to juice, add salt, mustard and brown sugar, fry until the onion thickens.
- Serve the catfish with caramelized onions and vegetables. Enjoy your meal!!!
