Turkey Pastrami with Dried Cranberries Recipe
Turkey pastrami according to this recipe is soft, tender, juicy and flavorful. It can be served as a slice on a festive table, for Breakfast on sandwiches or as an addition to a salad and is very convenient to take on a picnic.

Ingredients
Pastrami:
- 500 gram Turkey
- 15 gram Cranberries (dried)
For the brine:
- 2 glasses Water
- 2 tablespoons Salt
- 1 tablespoon Sugar
- 2 pieces Bay leaf
- 5 pieces Black pepper (peas)
For the marinade:
- 2 tablespoons Olive oil
- 2 tablespoons Soy sauce
- 1 tablespoon Honey
- 1 teaspoon Paprika sweet
- 1 teaspoon Seasoning (Provence herbs)
- 1 tablespoon Mustard (seeds)
- 2 tablespoons Lemon juice
Instructions
- For brine, pour water at room temperature into a container, add salt, sugar, pepper and Bay leaf.
- Mix the brine well so that the salt and sugar are dissolved. Place the Turkey steaks in it, cover with cling film and refrigerate for 2-3 hours. If you use a whole Turkey breast, leave it in the brine for 4-5 hours.
- Next, remove the steaks from the brine, beat a little with a hammer to make it easier to roll.
- For the marinade, mix olive oil, soy sauce, honey, lemon juice, paprika, spices and mustard.
- Marinate Turkey steaks in it for 1-2 hours.
- Next, lay the steaks on top of each other and distribute the dried cranberries (if desired).
- Roll into a roll and tie tightly with food thread. Do not pour out the remaining marinade.
- Transfer the roll to a baking dish, I have silicone. Cook in the oven, preheated to 180 gr., 1 hour. During cooking, pour the remaining marinade over the pastrami 1-2 times. Then turn off the oven and leave the pastrami there until completely cooled. Then carefully remove the threads from the pastrami.
