I have been eating baked or boiled dishes for a long time, in general, I eat healthy food! I offer you just a wonderful, delicious and beautiful dish - chicken meatballs baked in a puree of fresh tomatoes and bell peppers with onions and parsley.

Ingredients
For stuffing:
- 1 piece Chicken breast
- 1 piece Onion
- 2 cloves Garlic
- 1 piece Chicken egg
- 0,5 teaspoon Salt
- 0,25 teaspoon Cayenne pepper to taste
- 1 handful Rice
- 3 tablespoons Vegetable oil
For vegetable puree:
- 3 pieces Tomatoes
- 1 piece Bulgarian pepper
- 1 piece Onion
- 2 twigs Parsley
- 125 ml Water hot
- Salt to taste
- Black pepper to taste
- 2 tablespoons Olive oil
For filing:
- Dill fresh
Instructions
- The breast I have on the bones is 600 grams, I will make a fillet out of it and somewhere I got ~ 350 grams. I'll add onion and garlic to the minced meat.
- I'll cook minced meat in a food processor. Sliced chicken fillet, onion - into quarters, garlic - into 2 parts, broken egg, salt and pepper I put in the bowl of the combine. Minced meat is cooked in a minute. Very pleased.
- This is the structure of the meat. I was very pleased with the smooth and uniform consistency of minced meat.
- I added rice circles to the minced meat and mixed it. I always use round rice in minced meat, it is starchy.
- Form balls of rather large size from 9 pieces, roll each in flour. I made them of such quantity and size that they fit in my 20X20 cm shape and that there was no filling. If desired, you can form smaller ones.
- Grease the mold with 1 tablespoon of oil and lay out the balls. Put in the oven, preheated to 180 ° C, for 20 minutes. After 10 minutes, I took the mold out of the oven, turned the balls to the other side and put it back on for 10 minutes. Thus, my balls were slightly browned and took a "clear" shape.
- During this time, while the balls were baking in the oven, I cooked tomato and vegetable live puree and crushed it again in a food processor. Cut the vegetables into quarters, chop the parsley coarsely and send it to a bowl. Whipped until a homogeneous mass was obtained for 1 minute, pulse mode was used inclusive for 30 seconds.
- I got mashed potatoes. It would be red with the addition of red bell pepper. I didn't have it, but it was green. Already in the broken mashed potatoes, I added half a cup of hot water, made it more liquid. Then add salt and pepper to taste.
- Pour out the mold with balls, pour 1 tbsp olive oil on top and put it in the oven to bake for 30 minutes at t-180 C.
- The finished dish!
- To serve. I served it without a side dish, just watering the baked balls with tomato puree and sprinkling with dill greens.
