On New Year's Eve, it is not always possible to bake a cake. We offer fragrant exquisite pastries for the festive table: lemon cookies with white chocolate and pistachios.
Take three bowls (capacity). In one, mix the dry ingredients: flour, semolina, salt, soda, vanilla and baking powder.
In another bowl, mix the egg, olive oil, juice and zest of half a lemon, liqueur. Whisk with a whisk.
In the third container, beat butter at room temperature with a mixer into cream with sugar.
Mix the liquid ingredients and butter with sugar, whisk.
Add the dry ingredients.
Mix thoroughly.
Cover the baking sheet with baking paper. Take a cooking bag or just a package, file, cut off the end, make a hole with a diameter of about 1 cm. You can take, as I did, a nozzle and insert it into a cooking bag.
Put the dough in a bag and lay out the cookie blanks about 5 cm long, leaving a distance between them. I'll tell you right away, so that the picture remains on the cookies, it must be put in the freezer for 30 minutes, I didn't do that.
From this amount, 18 pieces turned out.
Place the baking sheet in a preheated 180 degree oven. Bake until light golden brown for about 20 minutes.
The finished liver is allowed to cool completely.
Chop the pistachios in a blender into crumbs.
Put the broken white chocolate in the cooking package. Heat the beans for 20-30 seconds until the chocolate melts. Cut off the tip of the package. Put a picture on the cookie. Sprinkle pistachio crumbs on top immediately (not yet frozen chocolate).
Let the chocolate freeze on the cookies, it is better to put it in the cold.
